In this recipe, lean chicken is bathed blissfully in a rich yogurt sauce with a gargantuan amount of antioxidizing cilantro. It’s an effortless-to-prepare recipe that fills your tummy while simultaneously fueling the immune system and taste buds – all without you even breaking a sweat in the kitchen.


A large bunch of fresh cilantro (about 2 ¾ oz), coarsely chopped
1 large tomato, cut into quarters
6 garlic cloves, finely chopped
3 tablespoons grated (peeled) fresh root ginger
2–4 green chillies, chopped
3/4 teaspoon salt, or to taste
1 teaspoon sugar
1lb 2oz plain yogurt
1 teaspoon turmeric
1 tablespoon olive oil
1lb 2oz  skinless, boneless chicken breasts, cut into bite-size pieces
freshly ground black pepper, to taste

In a food processor, blend together the cilantro, tomato, garlic, ginger, chillies, salt, sugar and yogurt until smooth, then pour the mixture into a bowl and set aside.

Place the turmeric in a deep saucepan and pour in the olive oil. Cook over a low-medium heat until the turmeric starts to sizzle – this should take no more than 1–2 minutes.

Add the chicken and cook until sealed all over, stirring frequently – this should take no more than 5 minutes.

Now slowly pour in the yogurt-and-spice mixture, mixing well, then bring to a gentle simmer. Simmer, uncovered, for 10 minutes, stirring from time to time.

Season to taste with black pepper.

Serve with your choice of sides.
